For me, there is nothing like a warming pie. This one I particularly love, as I can adapt with whatever veggie combos I fancy that day - or whatever I have in the fridge. The naughty topping is optional, but completely recommended for a lovely pie crust!

Ingredients
My Favourite veggie combos
1/2 pumpkin sliced
3 zucchinis sliced
3 large carrots sliced
1 red capsicum sliced
1 green capsicum sliced
1 large brown onion sliced
2 tbsp olive oil
1/2 broccoli head, chopped into florets
1/2 cauliflower head, chopped into florets
2 sweet potatoes sliced
Capsicum mix (as above)
2 sliced potato
4 fresh medium tomatoes
Topping (optional)
1 french stick crumbed
1 1/2 cups grated cheddar cheese
1/2 stick butter melted
Handful sesame seeds
Instructions
Pick your vegetable combination of choice, or create your own!
If you choose to use the capsicum mix, sautee the capsicums and onions with the olive oil until soft
Cook each vegetable separately and layer in a dish as they are cooked
Season with salt, pepper, and any seasoning to your taste
If you are adding the topping, combine the bread, cheese and butter well, then add to the layered veggies. Sprinkle sesame seeds, then place under a low grill for 10 - 15 minutes, or until brown
If you are not in the mood for the topping, you can always add your sauce of preference - I suggest a tomato salsa or sweet chilli!
