Tomato and Lentil Dahl

If t This hearty recipe is perfect for your Earth Element dinner. Full of earthy veggies and rich flavour, this recipe will take you straight to India as the smells fill up your kitchen!

  • 1 large carrot roughly chopped
  • 1 large onion chopped
  • 3 cloves of garlic, grated
  • 2.5cm piece of fresh ginger, peeled and grated
  • 230g dried red lentils
  • 35g / 1 large tin chopped tomatoes
  • Juice 2 limes
  • 1 bunch coriander
  • 2 tsp heaped cumin
  • 1 tsp garam masala
  • 2 kaffir lime leaves
  • 2 dessert spoons of veggie stock powder
  • 3 tsp ground tumeric
  • 1 tsp mild chili powder
  • 2 tsp curry powder
  • 2 tsp mustard seeds
  • Salt & pepper
  • 1 tbsp olive oil
  • 400g coconut milk
  • 2 cups water
  1. Add the oil to the large pot, and add the sauteed onion, garlic, ginger and spices. 
  2. In a food processor, blend carrots and coriander  - if you don't have a food processor grate the carrot
  3. Add mix to the large pot
  4. Add the water, lentils, tomatoes, kaffir lime leaves and stock
  5. Leave to heat, then simmer for 15 minutes
  6. Add coconut milk until lentils soften
Serve with yoghurt, rice and/or naan bread
