Spicy Lentil Salad
Add a little spice to your lunch or dinner with this delicious recipe. This is a quick recipe that can be whipped up in no time.

Total Time: 40 minutes
Ingredients

600g red lentils or French lentils

140g currants
-
1/3 cup capers
Dressing

250ml light olive oil
-
70ml red wine vinegar
-
2 tbsp caster sugar
-
2 tsp ground cumin
-
2 tsp mustard powder
-
2 tsp curry powder
-
1/4 tsp nutmeg
-
1/4 tsp cinnamon
-
1/4 cup fresh orange juice
Garnish (optional)

Red onion slithers
-
Parsely
-
Feta cheese
Instructions
-
Cook the lentils as per packet instructions - should take about 20 minutes

While cooking the lentils, add dressing ingredients together in a jug and mix well
-
Once the lentils are cooked, stir in the capers and currants and remove from heat.

Pour the dressing over the lentils, and add your garnish of choice!
